Iced Coffee Shakeology

After I had my second baby, I learned what tired really was. The whole ‘sleep when baby sleeps’ rule doesn’t really work when you also have a toddler to chase after. My kids were 6 months and 2.5 years when I started drinking coffee. I love creamy, blended iced coffees. When I started drinking Shakeology a few months ago, I decided to try to create a similar drink at home. This is my favorite recipe and the one I am most likely to drink.

1 scoop vanilla Shakeology

1 cup chilled coffee

Splash of milk

Blend until smooth

Pumpkin Spice Shakeology

It’s fall, which means it’s time to pumpkin everything! I’m down to just a few scoops of vanilla Shakeology, so I decided to try and create a pumpkin spice recipe before I run out. I’m not generally a fan of pumpkin flavored drinks, but I really enjoyed this shake.

1 scoop vanilla Shakeology

1/2 cup pumpkin puree

1 cup milk/almond milk/coconut milk

1/4 cup chilled coffee

Dash of cinnamon and nutmeg

Blend until smooth.

I’m Still Here

Well, hello there!  I’d like to start by apologizing for my absence.  I didn’t mean to take such a long break from the blog, but it happened.

Quite a bit has happened since my last post.  On September 16 the moving company arrived to pack and load our things.  The kids and I left after lunch and arrived in our new city just after dinner.  The hubs arrived a few hours later.  We stayed in a hotel that night and got to our new house early the next morning to await the movers.

We are finally settled in to life here in central Missouri.  We’ve been able to visit family on the weekends and even celebrated Gene’s third birthday.  We are missing our friends back in Illinois, but being so close to family helps.

I have plans to update things around here more often.  I have lots of updates and photos to share.  But for now, I am watching the World Series.

Go, Royals!

Catching Up

  • Yep, it’s true.  We’re moving to Missouri!  If you remember back to January, you’ll know that we were supposed to move in February.  While that didn’t work out like we’d hoped, we continued to pray that we’d have an opportunity to move closer to family.  God answered our prayers and my husband was offered a new job last month!  We will be living within 30 minutes of 90% of our family.  We’re really looking forward to being a lot closer, though it’s definitely going to be an adjustment.
  • We were in Missouri over Labor Day weekend looking for a place to live.  Let me just say, there are a lot of dumpy rental houses out there!  We actually ended up deciding to rent the first place we looked at.  It’s slightly larger than our current home.  The kids will have a playroom (yay!) and I’ll have a room where I can do my sewing (YAY!).
  • Moxie is officially at the top of the height limit for her infant car seat.  Rather than purchase another convertible car seat, we bought Gene a 3-in-1 harness booster and gave his convertible seat to her.  Gene hates his new car seat.  Getting him in it is a huge battle.  Once he’s in it he’s fine, but getting the buckles done is a nightmare.  I am surprised the neighbors didn’t call the cops, because I’m sure it looked like I was attempting to kidnap him.
  • Moxie turned one last month!  I still need to take her monthly picture and write the post.  We had a fun birthday party for her.  She was a bit overwhelmed by all of the new faces, but she loved her cake.

Five on Friday

I am really struggling with the Terrible Twos right now.  My toddler spends a lot of time in Temper Tantrum Town lately.  Crying, hitting, not listening.  It’s tough.  One minute he is literally trying to rip the curtains down and the next he is snuggling up to me.  I am sure that being 2.5 is just as frustrating for my son as it is for me.  He doesn’t have the vocabulary to really express what he’s feeling yet.

My son still does not like the baby.  I knew her arrival would turn his little world upside down, but I assumed that by now he would have changed his mind.  I see my friends with kids the same ages and mine is the only one who hates his baby sister 99% of the time.  Once in a great while he will pat her head and announce, “I nice!”  Or he will look at her and say, “Baby Mossy!”  Then two minutes later he’s back to taking toys from her hands or screaming.  I still hold out hope that one of these days he will wake up and announce that he loves his little sister.

I hope.

Moxie is getting so big!  A couple of weeks ago she mastered going from her tummy to sitting up.  This week she started pulling up on everything!  She can’t quite pull herself to standing, but she can get to her knees.  This makes her just tall enough to reach things on the sofa.  She thinks it’s fantastic.  I think my baby is disappearing!

I am so happy that spring is here!  As I’m writing this, it’s actually chilly and gloomy outside, but it’s supposed to be warmer this weekend.  My toddler would love nothing more than to live outside where he can draw with chalk and play in the dirt to his heart’s content.  I suppose playing in the dirt is better than tearing my curtains off of the wall.

I am tired.  That’s not really news, but I just thought I’d throw that out there.  My kids wake up entirely too early.  If I could get them both to sleep until 7:30 or 8, that would be great.  Right now my toddler wakes up before 6AM.  So early.  I don’t know about you, but I can barely function that early in the day.  Speaking of waking up early, I’m off to have a cup of coffee so I can wake up!

Five on Friday

For the last twelve days, everyone in our house has been sick.  It’s been rough.  It started with my toddler on the 23rd.  He woke up fussy, had no appetite, and was running a low-grade fever.  Moxie started coughing two days later.  Fortunately I am still breastfeeding, so she was never quite as sick as Gene.  She did, however, start wheezing a little on Friday, so Saturday morning I took her to express care where they prescribed breathing treatments.

Both kids are now on the mend.  The wet cough has been replaced by the dry cough that lingers forever after a cold and the snot faucets have slowed to a drip.

Oh, did I mention that I have also been sick?  Apparently a week of tiny people constantly coughing and sneezing on my face finally got to my poor immune system.  Thanks, kids.

Remember this post?  That’s not happening.

Moxie started solids last week!  We’ve decided to give baby led weaning (BLW) a try.  So far she has tried banana and cucumber.  She seems to enjoy it so far.

I am seriously over winter.  I am tired of it always being 30° below the average temperature for this time of year.  It’s March!  I need my toddler to play outside and run off some of his energy.  The terrible two’s are bad enough without adding in the fact that we’re cooped up in the house.

I bought Tangled on DVD the other day.  You know, for my kids.  We’ve already watched it twice in as many days.  It’s such a cute movie, though, so I’m not complaining.  I’m looking forward to Frozen coming out on DVD in a couple of weeks.

My Kiddos

This is Gene.  He was born in October 2011 and really puts the “two” in attitude.  He is the happiest child I have ever seen.  He finds pure joy in the simplest things.  He loves books, Daniel Tiger’s Neighborhood, and running around like a wild animal.  He is ornery and smart.  He knows so many words but only says them when the mood strikes him.  He gives the best little hugs and melts my heart, even when he’s doing something he shouldn’t.

This is little Moxie.  She was born in August 2013 and is almost 5 months old.  I’m not sure how that happened since I just gave birth to her last week.  She is the sweetest baby and has the biggest laugh.  She loves made-up songs and watching her big brother play.  Whenever I’m feeling frazzled, I know she will flash me one of her big smiles and help make everything better.

Being a mother has been one of the most rewarding experiences.  These two little people are my whole world and nothing brings me more joy than to see them happy and growing.  I’m not sure how I lucked out and got two such wonderful kids, but I am not complaining!  I love watching them learn new things about their little worlds.

Happy 2014!  It’s the new year so you know what that means — New Year’s Resolutions!  I’ve decided to make a few this year.  It’s nice to have goals.  The feeling of accomplishment when you reach one of your goals is even better.

Here are a few of my goals for 2014:

Make a quilt for each of my kids

I’ve wanted to make quilts for my kids for quite some time now, but always end up working on something else.  I actually have a quilt top finished for my son, it just needs to be quilted.

Try new recipes

My husband is a picky eater.  It makes adding new recipes to our collection tricky.  Lucky for me, my toddler will eat almost anything.  Hopefully I can find a few recipes the whole family can enjoy.

Do the 30 Day Shred

Operation: Get Fit needs to be a bigger priority this year.  I’ve lost all of the baby weight, but really need to shed a few more pounds.  I would rather have a root canal than drag two little kids to the Y in the middle of winter, so Jillian’s 30 Day Shred will have to do for now.

Meal plan

I have been working on this one for a while.  I plan a week’s meals at a time, but would love to work my way up to two or even four weeks at a time.  This is one chore I do not enjoy doing, so it seems to take me forever to come up with meal ideas.

Do you make New Year’s Resolutions?  What are your goals for 2014?
